What size actually changes

Does portafilter size affect espresso taste?

Not directly. A well-prepared 54 mm shot and a well-prepared 58 mm shot are both good espresso. What size changes is the ecosystem around the shot: baskets, tampers, distribution tools, puck screens and bottomless portafilters are made in far greater variety for 58 mm, because that is what commercial machines use.

Why is 58 mm the standard?
